Today we're baking a homemade vegetable quiche with a wholesome whole spelt crust and a filling packed with roasted veggies and melted cheese. Let's get our hands into the dough and make something completely from scratch, perfect for sharing. With just a little patience, we'll get a crisp, golden crust and a tender, juicy center.

Prep: 25 minCook: 50 minServes: 4

Ingredients

Here are the ingredients you'll need

  • 125g whole spelt flour
  • 1 XL egg
  • 30g light butter
  • Pink Himalayan salt

For the filling

  • Low-fat cheese
  • Roasted vegetables
  • 6 egg whites
  • Fresh chives
  • Pink Himalayan salt

Step by step

Method

  1. 1Place all the crust ingredients into the food processor and mix for 6 min on speed 3 (if you don't have a food processor, knead by hand with a little patience, as this dough can be quite crumbly).
  2. 2Remove the dough, place it inside a freezer bag, and flatten it out into a disk. Chill in the fridge for 1h.
  3. 3Once chilled, take it out and roll it into a round shape.
  4. 4Line your tart pan with parchment paper and gently place the dough over it.
  5. 5Trim any excess edges and prick the bottom with a fork so it doesn't puff up in the oven. You can also blind bake it with baking weights (I used dried chickpeas).
  6. 6Bake for 15min at 200ºC.
  7. 7Meanwhile, prepare the filling: whisk the egg whites, stir in the well-drained roasted vegetables, cheese to taste, snipped chives, and salt to taste.
  8. 8Mix everything together well and, once the crust is pre-baked, pour the filling inside.
  9. 9Bake again for 30-40min at 180ºC.
  10. 10All done! Our HOMEMADE VEGETABLE QUICHE is ready to enjoy.
