We're making a pear, gorgonzola, and goat cheese quiche with a shortcrust pastry base. We combine pears with cheese and finish it off with a drizzle of honey and some pine nuts.

Prep: 20 minCook: 35 minServes: 6

Ingredients

  • 1 sheet shortcrust pastry
  • 3 Conference pears
  • 4 eggs
  • 400 g 0% fat-free smooth fresh cheese (quark or whipped cottage cheese)
  • 100 g low-fat cream cheese
  • Gorgonzola cheese
  • Goat cheese log
  • Onion powder
  • Pink salt
  • Honey
  • Pine nuts

Step by step

  1. 1Line a quiche dish with the pastry dough, prick the base with a fork, and place dried beans or chickpeas on top so the crust stays flat while baking.
  2. 2Bake at 200ºC for 10-15 minutes (keep an eye on it so it doesn't get overly browned).
  3. 3In a bowl, whisk the eggs with a pinch of salt, onion powder, the smooth fresh cheese, and the cream cheese.
  4. 4Slice the pears into thin slices.
  5. 5Once the crust is blind-baked, remove the baking weights and arrange a layer of pear slices over the base.
  6. 6Pour in the egg mixture, then scatter pieces of gorgonzola, the rest of the pear slices, and rounds of goat cheese on top.
  7. 7Bake at 200ºC for about 15-20 minutes, or until the filling is nicely set.
  8. 8Take it out of the oven, drizzle with a little honey, and scatter some pine nuts over the top.
  9. 9And that's it! Our pear, gorgonzola, and goat cheese quiche is ready to serve.
