Today we're making an Iberian salchichón and extra virgin olive oil tartare, a simple appetiser bursting with flavour that comes together in just a few minutes. We combine Iberian salchichón with finely diced vine tomatoes and a generous drizzle of good extra virgin olive oil. Serve it in individual portions with mini toasts to enjoy that lovely crunchy contrast.

Ingredients

Here are the ingredients

  • Iberian salchichón
  • Vine tomatoes
  • Extra virgin olive oil
  • Mini toasts (mine had onion)

Step by step

Method

  1. 1Peel the salchichón and chop it very finely.
  2. 2Wash the tomatoes and dice them finely.
  3. 3Place everything into a bowl and add a generous drizzle of extra virgin olive oil.
  4. 4Serve in individual portions alongside a mini toast to accompany.

Extra tip

  1. 1You can add a pinch of salt to the tomato, although personally, with the rich flavour of the Iberian salchichón, I don't find it necessary.
