Today we are making meatballs with Ibérico ham—the kind of comfort food that calls for plenty of bread and no rush. We combine ground beef and pork with the savory punch of Ibérico ham and a rich homemade tomato sauce. Plus, we can make them ahead of time so they are even more flavorful the next day.

Ingredients

Here are the ingredients you need for the sauce

  • 2 large white onions
  • 1 leek
  • 2 carrots
  • 2 large tomatoes
  • 1L crushed canned tomatoes
  • 1 tsp pink salt
  • 2 tsp dried oregano
  • 1 tsp garlic powder
  • Extra virgin olive oil

Here are the ingredients you need for the meatballs

  • 1/2kg ground beef
  • 1/2kg ground pork
  • 2 garlic cloves
  • 1 slice of sandwich bread
  • Milk
  • 1 egg
  • 100g Ibérico ham
  • Pink salt
  • Ground black pepper
  • Fresh parsley
  • Extra virgin olive oil

Step by step

Method

  1. 1Sauté the diced onion and sliced leek until softened.
  2. 2Add the carrots, fresh tomatoes, salt, oregano, and garlic powder, and let everything continue sweating down gently.
  3. 3Pour in the crushed tomatoes, cover, and simmer until the sauce is well reduced and cooked through.
  4. 4Mix all the meatball ingredients together in a bowl.
  5. 5Shape the mixture into meatballs.
  6. 6Brown them in a skillet over medium-high heat just to sear the outside.
  7. 7Once the sauce is ready, add the meatballs directly into the sauce and let them simmer gently for about 15/20 minutes.
  8. 8Now we can sit down and enjoy these MEATBALLS WITH IBÉRICO HAM!

Notes

  1. 1You can make these using all beef, all pork, or even all chicken.
  2. 2They taste even better when cooked a day in advance.
  3. 3Instead of canned crushed tomatoes, you can crush very ripe plum tomatoes at home.

Tips and tricks

Lightly wet your hands with cold water when rolling the meatballs so the meat mixture does not stick and the surface stays smooth.

Just sear them briefly in the skillet and let them finish cooking inside the sauce so they stay tender and juicy.

They taste even better the next day and freeze wonderfully right in their sauce.
