Beans & legumes
Be the first to rate it!

Today we're treating ourselves to lentils with artichokes and king prawns, a hearty stew that lets us enjoy legumes in a different, deeply flavourful way. At home, we blend the vegetables right into the broth to achieve that rich consistency we love so much, making every spoonful a comfort.

Ingredients

Here are the ingredients

  • 350g pardina lentils
  • 500g peeled king prawns
  • 1 jar preserved artichoke hearts
  • 1 green bell pepper
  • 2 tomatoes
  • 2 leeks
  • 2 carrots
  • 1 head of garlic
  • 1 spring onion
  • Bay leaves
  • Sweet paprika
  • Dehydrated vegetable stock powder or pink salt
  • Extra virgin olive oil

Step by step

Method

  1. 1In a large pot with a splash of extra virgin olive oil, sear the king prawns briefly and set them aside.
  2. 2In that same oil, sear the vegetables.
  3. 3Rinse the lentils under cold running water and add them to the pot.
  4. 4Add the stock powder or salt, sweet paprika to taste, and cover with double the amount of water.
  5. 5Cover and simmer for 30-40 minutes.
  6. 6At this point, you can scoop out the vegetables, blend them, and stir them back in just like I do at home, or leave them whole.
  7. 7Once the cooking time is up, add the king prawns and the canned artichokes. If the lentils look a bit dry, add a small splash of water.
  8. 8Simmer gently over low heat for 5 minutes.

Extras

  1. 1You can use fresh artichokes instead; just add them right at the start with the rest of the vegetables.

Keeps wonderfully in the fridge for 2-3 days.

This dish freezes brilliantly.

You can reheat it in the microwave or in a saucepan with a little water so it doesn't get too thick, and it will taste freshly made.
