Lentils with Tofu and Peas

Today I'm making lentils with peas and tofu to give our everyday pulses a delicious twist. It's a simple recipe for two, the kind that hits the spot when you crave pulses without having to simmer a stew from scratch. I use jarred cooked lentils and pre-cooked peas, so most of the work is already done.

The charm of these lentils with tofu lies in marinating the tofu with soy sauce and spices before browning it in the pan. That way it absorbs lots of flavor and becomes so appealing when tossed with the pulses. I love this combination for a meatless meal made with straightforward ingredients and zero fuss in the kitchen.
