Ingredients

Here are the ingredients you'll need for this recipe

  • Pumpkin
  • Red onion
  • Goat cheese
  • Black pepper
  • Herbs de Provence

Step by step

Method

  1. 1Preheat the oven to 200ºC.
  2. 2Peel the onion, slice it into thin strips, and gently sweat it in a skillet over low heat.
  3. 3Meanwhile, clean the pumpkin, cut it into slices about 1.5 cm thick, and roast in the oven for about 15 minutes (or until tender).
  4. 4Once the pumpkin is ready, take it out of the oven and top with pieces of goat cheese.
  5. 5Season with black pepper to taste.
  6. 6Layer the softened onion over the top.
  7. 7Sprinkle with herbs de Provence.
  8. 8Return to the oven and bake until the cheese melts nicely.
  9. 9Done! Our roasted pumpkin with goat cheese and red onion is ready to serve.

Notes

  1. 1I soften the onion without any oil, simply covering the pan so it steams and cooks in its own moisture. This dish already gets plenty of healthy fats from the goat cheese, so it doesn't need extra.
  2. 2You can use a white or yellow onion instead.
  3. 3Keep the skin on the pumpkin while roasting; it slides off effortlessly once cooked when you eat it.
  4. 4Feel free to season with any other spices or herbs you love.
