Today I'm making salmon with broccoli and quinoa, an easy combination of fish, greens, and grains to sort out a meal without any fuss. With pre-cooked quinoa, you'll have it on the table in 25 minutes and it makes two servings. I love it for days when I want to eat varied meals without needing a long shopping list: here, just salt and pepper are plenty for seasoning.

To make sure this salmon with quinoa and broccoli turns out great, the quinoa should be al dente and fluffy, not clumpy. You can finely chop the broccoli or grate it with a box grater if you don't have a food processor. That way you can make the recipe using tools you already have at home.

If you like this combination, I suggest my baked salmon with asparagus and king prawns with peppers and quinoa to switch up your weekly meals.

Frequently asked questions

Is the 300g of quinoa weighed raw or cooked?

It's 300g of already cooked quinoa. If you're starting from raw quinoa, cook it according to package instructions, making sure it stays al dente, and then weigh out the amount you need.

How can I prep the broccoli if I don't have a food processor?

You can grate it with a cheese grater. Do it carefully, especially when you get down to the smaller pieces.

Can I make this salmon with broccoli using soy sauce?

Yes, though the original recipe only calls for salt and pepper. Add a splash of soy sauce and reduce or skip the salt so it doesn't end up too salty.
