Ingredients
Here are the ingredients you need for this recipe
- Frozen peeled prawns
- 1 package frozen baby eel substitutes (gulas)
- Red bell pepper
- Green bell pepper
- 1/2 onion
- 1/4 cup quinoa
- 1 teaspoon olive oil
- Ground cayenne pepper
- 1 garlic clove
- Pink Himalayan salt
- Ground black pepper
- 2 cups water
Step by step
Method
- 1Place the quinoa in a fine-mesh sieve and rinse it well under running water, then set aside.
- 2Set a skillet over the heat with the teaspoon of olive oil and the finely minced garlic.
- 3Once it starts turning golden, add the frozen peeled prawns.
- 4Right after, add the finely chopped red pepper, green pepper, and onion, letting everything cook thoroughly.
- 5Season to taste with salt and pepper.
- 6When the veggies are nice and tender, add ground cayenne to taste (you can also use a couple of dried chili peppers).
- 7Add the quinoa along with the 2 cups of water, cover, and let simmer over low heat for 15 minutes.
- 8Once the time is up, uncover, add the gulas, toss everything together well, and let it cook for a couple more minutes.
- 9Done! Our SPICY PRAWN QUINOA is ready to serve.
Notes & Extras
- 1If the liquid reduces too fast, splash in a little more water as needed. The pan should end up with no liquid left, so cook uncovered during the last few minutes to allow any remaining water to evaporate.
- 2You can also make this using pre-cooked, drained quinoa. In that case, instead of adding quinoa and water, simply stir in the cooked quinoa and sauté everything together well so the flavors mingle.
