Today we're making baked scallops stuffed with king prawns, a recipe that brings a special touch to our table without too much fuss. We combine the prawns with gently softened onion and homemade tomato sauce for a wonderfully juicy filling. We finish with a layer of breadcrumbs and broil until beautifully golden.

Ingredients

These are the ingredients you'll need

  • 5 to 6 scallops
  • 2 large onions
  • 300g frozen king prawns
  • A splash of white wine
  • Black pepper
  • 2 tablespoons homemade tomato sauce
  • Fresh parsley
  • Extra virgin olive oil
  • Breadcrumbs

Step by step

Method

  1. 1Soak the scallops in salted water so they release any sand or grit (repeat this process three times).
  2. 2Preheat the oven to 180ºC.
  3. 3In a skillet, gently cook the onion until soft and translucent.
  4. 4Add the chopped king prawns and sauté well.
  5. 5Add black pepper and a splash of white wine, then cook for a couple of minutes.
  6. 6Meanwhile, open the scallops, clean them, and place them back in their shells.
  7. 7Add the tomato sauce and fresh parsley to the pan, cooking until it is no longer watery.
  8. 8Top the scallops with the mixture and sprinkle breadcrumbs over each one.
  9. 9Bake for about 10 minutes without the broiler, then switch on the broiler for the last 2 minutes.
  10. 10All set! Our SCALLOPS STUFFED WITH KING PRAWNS are ready.
