Chickpeas with Mushrooms

Today I'm making chickpeas with mushrooms for those days when I want a wholesome homemade meal without spending ages in the kitchen. With a jar of cooked chickpeas, sliced mushrooms, and a touch of garlic and oregano, I have lunch for two ready in 20 minutes in a single pan. It's an easy way to get your legumes in on a busy weekday with just a handful of ingredients.

To make them really tasty, I like to let the mushrooms release their liquid and get nicely golden before tossing in the well-drained chickpeas. If you fancy turning this into chickpeas with mushrooms and egg, just top each plate with a fried or griddled egg when serving; the base recipe doesn't include it.

Frequently asked questions

How long do chickpeas with mushrooms keep in the fridge?

You can store them in an airtight container in the fridge for up to 3 days. Put them away within two hours of cooking, and only reheat the portion you're planning to eat.

Can you freeze chickpeas with mushrooms?

Yes, you can freeze them in individual portions, though the mushrooms might turn a bit softer once thawed. Let them defrost in the fridge and warm them back up in a skillet until piping hot.

Can I swap the white mushrooms for other varieties?

Yes, oyster mushrooms or a mixed wild mushroom blend work great—just slice them to a similar size. Sauté them until any excess liquid cooks off before adding the chickpeas; cooking times may vary slightly depending on the variety.
