Today we're making Vietnamese spring rolls with goat cheese, a fresh, simple no-cook recipe. We love how the tangy goat cheese pairs with the sweetness of ripe mango, and with a few rice paper wrappers and a little practice, you'll have a colourful dish ready to share.

Ingredients

Here are the ingredients you'll need

  • 3-4 rice paper wrappers
  • Goat cheese
  • 1/2 cucumber
  • 1 ripe mango
  • 1 tomato
  • Romaine lettuce
  • Soy sauce
  • Sesame seeds

Step by step

Method

  1. 1Peel and cut the vegetables, fruit, and cheese into thin batons, about half a centimetre thick.
  2. 2Dip the rice paper wrappers into plenty of lukewarm water and lay them flat on your work surface.
  3. 3Place the filling ingredients in the centre of each wrapper and fold.
  4. 4To roll them up neatly, start by folding the left side inward, then the right side, bring the bottom edge up over the filling, gently press to tuck it in without tearing the wrapper, and roll tightly.
  5. 5Serve with a drizzle of soy sauce and a sprinkle of sesame seeds on top.
  6. 6And that's it! Time to enjoy our VIETNAMESE ROLLS WITH GOAT CHEESE.
