Today we're putting on our aprons to make white beans with Swiss chard and ham, the kind of comforting bowl you'll want to make on repeat. We love how the cured ham and a touch of pimentón infuse the broth with deep flavor. Using a pressure cooker, we get a hearty homemade stew without spending hours in the kitchen.

Ingredients

Here are the ingredients you'll need

  • 200g dried white beans
  • 1 onion
  • 2 garlic cloves
  • Swiss chard
  • Diced cured ham
  • Smoked or hot paprika (pimentón)
  • Himalayan pink salt
  • Water or vegetable broth
  • Extra virgin olive oil

Equipment

  • Pressure cooker

Step by step

Method

  1. 1Sauté the onion in the pressure cooker with a generous drizzle of olive oil until it starts turning golden.
  2. 2Add the finely minced garlic right away.
  3. 3Before the garlic browns, add the Swiss chard and cook until wilted down.
  4. 4Stir in the paprika and salt, and sauté briefly so the spices release their aroma.
  5. 5Add the drained white beans, which have been soaked overnight (at least 12 hours).
  6. 6Cover with water or vegetable broth until it sits about one to two finger-widths above the beans.
  7. 7Add the diced ham and bring everything to a boil.
  8. 8Lock the pressure cooker lid; once steam begins escaping, lower the heat to minimum and cook for 40-45 minutes.
  9. 9When the time is up, release the pressure safely and open the lid once all the steam has escaped.
  10. 10Taste and adjust the salt, add a small drizzle of olive oil, and turn up the heat for about 5 minutes to reduce the broth to your liking.
  11. 11All done! Our WHITE BEANS WITH SWISS CHARD AND HAM are ready to serve.
