I love baking my own homemade bread, and this breadmaker oat bread with whole spelt is one of my favorites. I always like having a loaf ready to slice up for breakfast, especially on those busy mornings when I want to keep things easy.

This wholesome oat bread uses extra virgin olive oil and herbes de Provence, which give it a wonderful aroma. The spelt provides structure to the loaf while the breadmaker handles all the kneading and baking: I just measure out the ingredients in about ten minutes, and the machine does the rest.

If you're making oat bread in a breadmaker, remember to check your user manual for the correct order of wet and dry ingredients and the right setting for whole grain loaves.

Frequently asked questions

Can you freeze whole spelt and oat bread?

Yes. Let it cool completely, slice it up, and freeze the slices well wrapped or in an airtight freezer bag. That way you can take out just what you need and toast them straight from the freezer.

Is this oat bread gluten-free?

No, spelt is a variety of wheat and contains gluten. To make a gluten-free loaf, using certified gluten-free oats isn't enough: you would need a recipe designed for gluten-free baking, because replacing spelt changes how the dough holds together.

Can I use baking powder instead of baker's yeast?

No, this recipe relies on baker's yeast to ferment and give the dough its rise. Baking powder meant for cakes won't work as a substitute here.
