Today we're making a whole spelt and kiwi sponge cake, a simple recipe made with whole spelt flour that's lovely for an afternoon snack. We gently whip the egg whites and fold in the kiwi to bring a fresh fruity note to every bite. Shall we tie on our aprons and turn on the oven to make it together?

Ingredients

Ingredients you'll need for this recipe

  • 4 egg whites
  • 1 egg
  • 75g whole spelt flour
  • 15g 100% cookies and cream whey protein complex (or whichever you use)
  • 2 kiwis

Step by step

Method

  1. 1Preheat the oven to 200ºC.
  2. 2Whip the 5 egg whites until stiff peaks form (reserving the yolk from the whole egg).
  3. 3Once the whites are stiff, add the yolk and gently fold it in.
  4. 4Mash or blend one kiwi and fold it into the egg whites with gentle, sweeping motions.
  5. 5Mix the spelt flour with the protein powder and fold it into the whites gently so they don't deflate.
  6. 6Pour the batter into a cake tin.
  7. 7Peel the second kiwi, cut it into small pieces, and arrange them on top.
  8. 8Bake for 20-25min at 180ºC.
  9. 9Let cool and unmould.
  10. 10Dust a little extra whey protein over the top.
  11. 11All done! Our Spelt and kiwi sponge cake is ready to enjoy.
