Ingredients

These are the ingredients you'll need for this recipe

  • 1 large zucchini
  • 300ml healthy homemade sofrito
  • Tio Pelón garlic chili sauce
  • 50g textured soy protein (TVP)
  • 1/4l vegetable broth
  • Black olives

Equipment

  • Spiralizer

Step by step

Method

  1. 1With your sofrito already prepared ahead of time, add it to a skillet over medium heat.
  2. 2In a bowl, mix the textured soy protein with the vegetable broth so it hydrates thoroughly.
  3. 3Add hot sauce to taste to the sofrito and stir well to blend all the flavors.
  4. 4After 4-5 minutes, once the soy is rehydrated, add it to the skillet along with its broth and stir.
  5. 5Slice the black olives into rings and fold them in as well.
  6. 6Cover and cook over medium heat.
  7. 7Meanwhile, turn the zucchini into noodles using your spiralizer.
  8. 8Once the sauce has reduced nicely, add the zucchini noodles, toss well, and cook for 2 minutes, or less if you prefer them al dente.
  9. 9All done! Our zucchini noodles with vegan bolognese are ready
