Zoodles with Vegan Bolognese

Be the first to rate it!

Today we're treating ourselves to zoodles with vegan bolognese, a wonderful way to enjoy courgette paired with a rich, flavourful textured soy sauce. We'll rehydrate the soy directly in the sofrito and broth so it soaks up all those delicious flavours. And we'll leave our courgette noodles al dente, exactly how we like them best.

Ingredients

Here are the ingredients you'll need for this recipe

  • 1 courgette (zucchini)
  • Healthy homemade sofrito
  • 40g textured soy protein
  • 1 glass vegetable broth
  • Protein cheese powder

Equipment

  • Spiralizer

Step by step

Method

  1. 1Add the sofrito to a frying pan, then stir in the textured soy and vegetable broth.
  2. 2Mix well, cover, and cook over medium heat until the soy hydrates and the liquid reduces (rehydrating it straight in the tomato and broth helps it soak up all the flavour and taste so much better).
  3. 3Meanwhile, wash the courgette, trim off the stem end, and turn it into noodles using a spiralizer.
  4. 4Once the soy and sofrito are ready, add the courgette noodles, toss gently to coat them in the sauce, and turn off the heat right away (I recommend not cooking them for more than a minute or two because they'll turn soggy; it's much better to keep them al dente and fresh).
  5. 5Sprinkle some cheese powder over the top.
  6. 6All done! Our ZOODLES WITH VEGAN BOLOGNESE are ready.
