Falafels with curry fresh cheese sauce

Today I'm making baked falafels with cooked chickpeas and a curry fresh cheese sauce that we absolutely love at home. Cumin, garlic, and parsley bring plenty of flavor to the mix, and chickpea flour helps give it the right texture so you can shape the patties easily. It serves four, with just 15 minutes of prep and 20 in the oven.

If you're looking for delicious sauces to pair with falafel, this creamy blend with curry and lime goes wonderfully with every bite. I love sauces made with smooth whipped fresh cheese (queso fresco batido) because they come together in seconds and let you play with different spices. I serve it on the side for dipping: a fun, tasty way to bring legumes to the table for sharing.

Frequently asked questions

Can I freeze these falafels?

Yes, you can freeze them once baked and completely cooled. It's best to freeze them spread out on a tray first so they don't stick together. Keep the sauce separate and make it fresh when serving, as freezing can alter its creamy texture.

What can I use instead of whipped fresh cheese in the sauce?

You can use thick, unsweetened plain Greek yogurt. Add the lime juice little by little and taste as you go, since yogurt already has its own natural tang.

How do I keep falafels made with cooked chickpeas from falling apart?

Drain and dry the chickpeas very thoroughly before blending; excess moisture makes the dough harder to shape. Add the five heaping tablespoons of chickpea flour and press the patties firmly together with your hands before baking.
