Method
- 1Soak 6 gelatin sheets in cold water.
- 2Microwave the cup of milk for about 2 minutes.
- 3Remove it from the microwave.
- 4Squeeze the excess water from the gelatin sheets and add them to the warm milk.
- 5Whisk thoroughly until completely dissolved; I used a hand whisk.
- 6In a bowl, add the smooth fresh cheese, setting aside 2 tablespoons for later.
- 7Add the protein powder, sweetener, and food coloring to the bowl.
- 8Mix well until all the ingredients are fully incorporated.
- 9Now pour in the milk mixture and whisk well again.
- 10Pour the batter into a mold.
- 11Chill in the fridge for at least 4 hours, though letting it sit overnight is best.
- 12Once set, we'll prepare the topping layer.
- 13Place the 2 tablespoons of reserved fresh cheese into a small glass.
- 14Soak the remaining 2 gelatin sheets in cold water.
- 15Microwave the small glass of fresh cheese for about 2 minutes.
- 16Remove it from the microwave.
- 17Squeeze the gelatin sheets and stir them into the warm fresh cheese.
- 18Mix well until completely dissolved; I used a whisk again.
- 19Pour this mixture gently over the cheesecake to create the top layer.
- 20Chill in the fridge for a couple of hours.
- 21Top with the raspberries and blueberries.
- 22Chill for a couple more hours in the fridge.
- 23All done! Our Berry Protein Cheesecake is ready to enjoy.
