Today we're making broccoli, rice, carrot, and cheese half-moons, an easy and delicious way to get more veggies on the table with a wonderful touch of curry. We make them using raw broccoli and cooked brown rice, shape them by hand, and cook them in a skillet or the oven until golden and crisp.

Ingredients

Here are the ingredients you'll need for this recipe

  • 1 head of broccoli
  • 2 carrots
  • 100gr protein cheese
  • 100gr cooked brown rice
  • 1 egg
  • Curry powder
  • Garlic powder
  • Pink Himalayan salt (optional)

Step by step

Method

  1. 1Wash the vegetables thoroughly.
  2. 2Using a food processor, finely chop the cheese, then the carrots, and finally the raw broccoli, and transfer everything to a large bowl.
  3. 3Add the cooked brown rice and mix everything well.
  4. 4Season to taste with pink salt, curry powder, and garlic powder.
  5. 5Finally, beat the egg and mix it in until well combined.
  6. 6Heat a non-stick skillet over medium heat.
  7. 7Shape the mixture into half-moons with your hands and place them in the skillet. Once the pan is full, cover it and cook until you see the bottom is nicely toasted and golden.
  8. 8You can finish them under the oven broiler for a few minutes to get the tops lightly browned.
  9. 9And that's it! Our broccoli, rice, carrot, and cheese half-moons are ready to enjoy.

Notes and variations

  1. 1You can make this exact recipe directly in the oven at 200ºC for about 20 minutes.
  2. 2The cheese helps bind the mixture so they hold their shape while cooking. You can use a low-fat light cheese, or skip it entirely and handle them very gently, but I definitely recommend keeping some cheese in!
  3. 3Feel free to experiment with other spices, though curry powder gives them great flavor and lovely color.
