These lentil and broccoli burgers with brown rice are a simple way to pack more legumes and greens into your dinners. They turn out savory, tender, and infused with that lovely touch of curry I adore in my day-to-day cooking. The egg helps bind everything together so you can easily shape the patties, with no flour or breadcrumbs needed.

If you usually make chicken and broccoli patties, here is a meatless alternative with carrot and warm spices. This recipe makes 6 patties (2 servings), and takes about 40 minutes between prep and cooking time. I love them as an easy, wholesome dinner that leaves leftovers for the next day.

If you like this combination, I recommend my Lentil and Rice Stuffed Peppers and the Curry Broccoli and Salmon Burgers for more meal inspiration.

Ingredients

Here are the ingredients you need for this recipe

  • 90g cooked lentils
  • 60g cooked brown rice
  • 1/2 head of broccoli
  • 1 carrot
  • 1 egg
  • Garlic powder
  • Onion powder
  • Ground cayenne pepper
  • Curry powder
  • Ground turmeric
  • Himalayan pink salt (optional)

Step by step

Step-by-step

  1. 1Preheat the oven to 200ºC.
  2. 2Wash the broccoli and grate it using the coarse side of a box grater.
  3. 3Place the grated broccoli in a bowl.
  4. 4Wash and grate the carrot with the same grater, then add it to the bowl.
  5. 5Next, add the cooked lentils and cooked brown rice.
  6. 6Beat the egg well and stir it in too.
  7. 7Season to taste with all the spices and mix thoroughly to combine all the ingredients.
  8. 8Using an immersion blender, blend the mixture just slightly—just enough so the burgers hold their shape when formed.
  9. 9Stir everything well once more.
  10. 10Line a baking sheet with parchment paper.
  11. 11Using your hands, take portions of the mixture and shape them into burger patties.
  12. 12Bake at 180ºC for 15-20 minutes (keep an eye on them, as ovens vary).
  13. 13All done! Our Broccoli, Lentil, and Brown Rice Curry Burgers are ready.

Frequently asked questions

How long do these burgers keep in the fridge?

Since they contain cooked rice, cool them down quickly and store them in an airtight container in the fridge, ideally within an hour. Enjoy them within 24 hours and reheat until piping hot all the way through.

Can you freeze lentil and broccoli burgers?

Yes, you can freeze them once they are cooked and cooled quickly, placing parchment paper between them so they don't stick together. Thaw in the fridge and reheat thoroughly before serving.

Are these burgers gluten-free?

The recipe doesn't use flour or breadcrumbs, and the base ingredients are naturally gluten-free. If cooking for someone with celiac disease, make sure to check the labels on the curry and other spices, and avoid cross-contamination while prepping.
