Today we're making our Brocomole (Broccoli Guacamole), a fun twist on classic guacamole with raw broccoli and light ricotta that turns out wonderfully smooth and creamy. Ingredients

Here are the ingredients you need for this recipe

  • 1 medium head of broccoli
  • 1/2 onion
  • 200g light ricotta cheese
  • Himalayan pink salt
  • Ground cayenne pepper

Step by step

Method

  1. 1Peel, roughly chop, and pulse the onion in the food processor; set aside.
  2. 2Wash the broccoli, cut into very small florets, and pulse in the food processor as well.
  3. 3Add the reserved onion back into the food processor along with the ricotta, salt to taste, and ground cayenne.
  4. 4Blend everything thoroughly until you get a smooth, creamy texture.
  5. 5All done! Our Brocomole (Broccoli Guacamole) is ready to enjoy

Extras

  1. 1The broccoli flavor will be stronger or milder depending on how much you use, so if you're not a huge fan, I recommend using just half a head.
  2. 2You can also make this with boiled broccoli, as long as it's thoroughly drained and completely cooled.
  3. 3Feel free to use a different cheese; I wanted to use cream cheese, but I didn't have enough on hand.
  4. 4A squeeze of fresh lemon juice also adds a lovely bright note.
  5. 5You can toss fresh chilies into the mix if you like spice and don't have ground cayenne.
  6. 6It doesn't keep for very long, so I recommend making just enough to enjoy the same day.
