Today I'm sharing a cozy, wholesome dish that lets you nourish yourself without giving up any flavor: a creamy brown rice risotto with mushrooms and baby spinach. It's one of my absolute go-to meals when I crave home-cooked comfort food that's both nutritious and easy to put together.

I've tailored this single-serving version specifically for one, making it ideal for a quick, delicious lunch just for you. The combination of earthy vegetables with melted cheese creates an irresistibly creamy texture you'll fall in love with from the very first spoonful.

Ingredients

Here are the ingredients you need for this recipe

  • 50gr brown rice
  • 1/2 red onion
  • 1 bag frozen mixed wild mushrooms
  • 1 handful baby spinach leaves
  • 80gr high-protein cheese
  • Smoked spice blend
  • Garlic powder
  • Himalayan pink salt (optional)
  • Water

Step by step

Method

  1. 1Peel and finely chop the red onion.
  2. 2Add it to a skillet and sauté until soft and translucent.
  3. 3Once the onion is nicely softened, add the mushrooms and cook them thoroughly.
  4. 4Season to taste with your smoked spice blend and garlic powder.
  5. 5Toss in the baby spinach leaves and sauté again until just wilted.
  6. 6Next, add the brown rice, cover with water, and bring up to a boil.
  7. 7As soon as it starts boiling, reduce the heat to medium and cover with a lid.
  8. 8Cook for 18-20 minutes (if you notice the water evaporates completely during this time, just pour in a little more).
  9. 9Once the time is up, turn off the heat and leave it to rest for 5 minutes without taking off the lid.
  10. 10Remove the lid, add the grated cheese right away.
  11. 11Stir vigorously until creamy and melted.
  12. 12And that's it! Our Brown Rice Risotto with Mushrooms and Spinach is ready to devour.
