Cold Oatmeal with Almond Milk

Breakfast
Be the first to rate it!

This cold oatmeal made with almond milk is an easy way to sort out breakfast the night before. I make it with rolled oats, banana, and a touch of cinnamon, completely no-cook. It only takes five minutes to prepare and then rests in the fridge overnight: come morning, just stir and enjoy a cool, refreshing breakfast.

Resting allows the oats to hydrate and soften properly. To get this almond milk oatmeal just how I like it, I adjust the amount of liquid depending on whether I want it thicker or runnier. It's a lifesaver on mornings when I want breakfast ready without turning on the stove.

For breakfast variations, take a look at my rice pudding style cold oatmeal and my cold chocolate oatmeal, two more refreshing options to start the day.

Ingredients

Here are the ingredients you need for this recipe

  • 30 g rolled oats
  • Unsweetened almond milk
  • 1 banana
  • Ground cinnamon

Step by step

Method

  1. 1The night before, soak the rolled oats in almond milk in a small glass or bowl, and leave in the fridge overnight.
  2. 2The next morning, remove from the fridge, stir the chilled oats thoroughly, and add ground cinnamon to taste.
  3. 3Keep stirring to blend the cinnamon and flavors together nicely.
  4. 4Slice the banana and serve everything in a glass, jar, or bowl.
  5. 5Dust with a little extra cinnamon if you like.
  6. 6Done! Our Cold Oatmeal with Almond Milk is ready.

Notes

  1. 1Cover the oats with milk: if you add too much they'll turn out too runny, and if you barely cover them they'll be very thick; I like something right in between.

Frequently asked questions

How much almond milk should I add to the oats?

I pour in enough almond milk just to cover the oats and stir well before popping them in the fridge. In the morning, if they turn out too thick, I simply stir in a splash more until I reach the consistency I like.

How long does cold oatmeal keep in the fridge?

I keep it in a sealed container and eat it within one to two days. If making it ahead, I prefer adding the sliced banana right before serving so it doesn't brown.

How can I make this oatmeal gluten-free?

Use certified gluten-free rolled oats and check the label on your almond milk as well. The method and soaking time remain exactly the same.
