Cold «Rice Pudding» Style Oats

Breakfast
Be the first to rate it!

These cold overnight oats have that lovely hint of cinnamon and lemon we all love in classic arroz con leche, but I make them without ever turning on the stove. I use thick rolled whole oats and unsweetened plant-based milk, leaving the mix in the fridge overnight. That resting time softens the oats and lets them soak up every bit of flavour.

Come morning, all I have to do is stir in the yoghurt, give it a good mix, and tuck into a creamy, chilled bowl of porridge. It is such a handy breakfast if you are rushing out the door or simply like having things ready before heading to bed. Even though it reminds you of that traditional dessert, this version is made with oats, not rice.

Frequently asked questions

How long can I keep these cold oats in the fridge?

I usually make them the night before to eat the next day. If you need to prepare them further ahead, keep them in an airtight container in the fridge and enjoy within two days, stirring in the yoghurt right before serving.

Can I swap the protein yoghurt for plain yoghurt?

Yes, plain yoghurt or whipped fresh cheese (queso fresco batido) works wonderfully instead of protein yoghurt. Stir it in the morning and mix well; the overall creaminess will vary slightly depending on what you use.

How do I make these oats gluten-free?

Use certified gluten-free rolled oats and double-check the labels on your plant-based milk and yoghurt. If cooking for someone with coeliac disease, make sure to avoid cross-contamination with prep bowls and utensils.
