Cold Overnight Oats with Raspberries and Coconut

Breakfast

We're making cold overnight oats with raspberries and coconut for a refreshing, easy breakfast prepped the night before. We love how the rolled oats mingle with the raspberries and that lovely touch of coconut on top. All you have to do is remember to soak them, then give them a stir and top them off in the morning.

Ingredients

Here are the ingredients you'll need for this recipe

  • 30g rolled oats
  • Unsweetened plant-based milk
  • 1 Handful raspberries
  • Desiccated coconut

Step by step

Method

  1. 1The night before, blend a handful of raspberries with the almond milk using an immersion blender.
  2. 2In a small glass or bowl, add the rolled oats and pour the blended mixture over them to soak.
  3. 3Leave in the fridge overnight.
  4. 4The next morning, take it out of the fridge, give the chilled oats a good stir, and top with desiccated coconut and fresh raspberries.
  5. 5And that's it! Our cold raspberry and coconut oats are ready.

Notes

  1. 1Cover the oats just enough with milk; if you add too much they'll turn out too runny, and if you barely cover them they'll end up too thick. I like mine somewhere right in between.
