Today we're treating ourselves to these fluffy oat and raspberry pancakes, a simple homemade recipe made with whole oat flour and a handful of raspberries. We cook them over low heat with a lid on so they turn out thick and fluffy, and stack them with whipped fresh cheese between the layers to enjoy just the way we like.

Ingredients

Here are the ingredients you need for this recipe

  • 40gr whole oat flour
  • 4 egg whites
  • 1 egg
  • 1 handful raspberries

Toppings

  • 0% fat whipped fresh cheese
  • Raspberries
  • Chocolate protein crisps

Step by step

Method

  1. 1Place the pancake ingredients in a blender cup and blend thoroughly.
  2. 2Next, set a non-stick frying pan (preferably a small one so they stay nice and thick) over the heat.
  3. 3Pour in some batter and cover with a lid so they cook gently.
  4. 4Repeat the process until you've used all the batter.
  5. 5Finally, stack layer by layer with our whipped fresh cheese topping between each pancake, and finish by spreading more over the top.
  6. 6To finish, add a few raspberries and chocolate protein crisps on top.
  7. 7All done! Our fluffy oat and raspberry pancakes are ready to enjoy.

Notes

  1. 1The toppings are completely optional; feel free to add whatever you like best.
  2. 2If you use unflavoured oat flour, you may want to add a dash of sweetener so they don't taste bland.
  3. 3Keep the pan covered while cooking so they rise nicely, and always keep the heat gentle.
