Today we're making potato chip crusted king prawn montaditos, a crispy bite that we love sharing as an appetizer. We combine the king prawns with griddled zucchini and homemade roasted pepper sauce over bread, adding a touch of cayenne for a wonderful little kick.

Ingredients

Here are the ingredients you need

  • 8 King prawns
  • 2 Eggs
  • 1/2 Bag of potato chips
  • Ground cayenne pepper
  • Cornstarch
  • 1 Zucchini
  • Bread
  • Homemade pepper sauce (roasted peppers blended with cream cheese and garlic)

Method

  1. 1Peel and clean the king prawns, leaving just the tip of the tail on.
  2. 2Thread them onto wooden skewers or toothpicks and set aside.
  3. 3Crush the potato chips and mix them with the ground cayenne pepper.
  4. 4In a shallow bowl, beat the eggs.
  5. 5Place the cornstarch on another plate.
  6. 6Coat the king prawns in egg, then cornstarch, back into the egg, and finally coat well in the crushed potato chip and cayenne mixture.
  7. 7Transfer them to a baking sheet lined with parchment paper and repeat the process with all the prawns.
  8. 8Bake at 170ºC for about 8-10min or until the prawn tails turn white and the coating is nice and crispy.
  9. 9Meanwhile, slice the zucchini into ribbons and cook them on a griddle or skillet.
  10. 10Slice the bread and set aside.
  11. 11Assemble the montaditos: bread, roasted pepper sauce, griddled zucchini, and finish with the crispy king prawns.
