Today I'm bringing you one of my favorite options for a tasty, light dinner: delicious eggplant cannelloni stuffed with tuna and hard-boiled egg. It's a wonderful alternative to traditional pasta, ideal if you're looking for a wholesome, comforting meal that's quick and easy for any weeknight.

With the help of a mandoline, we'll slice the eggplant in no time, getting the perfect thickness for rolling. They take very few ingredients, and that melted cheese topping is something you're going to love.
