Garlic Prawns with Mushrooms

Fish & seafood
4.0 (1 rating)

These garlic prawns and mushrooms are a simple, fuss-free recipe made with just a handful of ingredients and ready in 30 minutes. I love serving them as a starter to share or as a main dish with plenty of crusty bread on hand for dipping. Even though they're traditionally called gambas, I like using frozen peeled king prawns: they shrink much less than smaller prawns and pair wonderfully with portobello mushrooms.

To get the most flavor out of garlic mushrooms and prawns, the golden rule is watching your garlic: you want it to release all its aroma without burning, which would turn the sauce bitter. I add dried cayenne pepper to taste, and fresh parsley finishes it off beautifully. These quantities yield two servings—a great option whenever you want a quick, easy meal without giving up on great flavor.

Tips and tricks

Tips and tricks for making garlic prawns with mushrooms

I use frozen peeled king prawns instead of tiny shrimp because they don't shrink nearly as much during cooking.

I use a whole dried cayenne pepper, but chili flakes work just as well.

It's very important not to let the garlic burn, or it will give the entire dish a bitter taste.

Frequently asked questions

Can I make this recipe with frozen king prawns?

Yes, I always use frozen peeled king prawns because they don't shrink as much as smaller prawns. Thaw them in the fridge and pat them thoroughly dry before cooking so they don't release extra water into the pan.

Can I replace the portobellos with white button mushrooms or other varieties?

Yes, you can use regular white mushrooms or any edible wild mushrooms you like. If they release a lot of liquid, let it cook off completely before adding the prawns so they don't end up overcooking.

How long do garlic prawns with mushrooms keep in the fridge?

Store any leftovers in an airtight container in the fridge within two hours of cooking, and enjoy them within one to two days. Reheat only the portion you plan to eat until piping hot, without letting it cook too long so the prawns stay tender.
