We're celebrating the most magical night of the summer with our no-sugar-added Coca de San Juan, a homemade recipe made with erythritol and fresh cherries. We prepare it with care, giving the dough all the resting time it needs and enjoying the wonderful aroma of citrus zest and orange blossom water. A lovely treat to share during the summer festivities!

Ingredients

Here are the ingredients you need for the dough

  • 500g strong bread flour
  • 100g plant-based margarine
  • 2 eggs
  • 140g erythritol
  • 1 pinch pink salt
  • 35g fresh yeast
  • 120ml plant-based milk
  • 2 tbsp vanilla extract
  • 2 tbsp orange blossom water
  • Zest of orange and lemon

Here are the ingredients you need for the topping

  • 1 egg
  • Erythritol
  • Fresh cherries
  • Raw sliced almonds

Step by step

Method

  1. 1Dissolve the yeast in 60ml of plant-based milk and immediately mix with 100g of the flour (let this sponge rest until it doubles in size).
  2. 2In a stand mixer, mix the remaining flour with the salt, sweetener, melted plant-based margarine, vanilla, orange blossom water, and citrus zests.
  3. 3After mixing for about 5 minutes, add the remaining plant-based milk and the eggs.
  4. 4Once well incorporated, add the sponge (which will have doubled by now) and knead well to bring everything together.
  5. 5Transfer the dough to a bowl and cover with plastic wrap (let it rest again until doubled in size).
  6. 6Once doubled, roll out the dough onto a piece of parchment paper on a baking sheet, cover again, and let it rest a little bit longer.
  7. 7Preheat the oven to 175ºC.
  8. 8Brush the coca with beaten egg, sprinkle sweetener to taste over the top, and scatter the sliced almonds and chopped cherries.
  9. 9Bake for 15 to 20 minutes.
  10. 10Remove from the oven and let cool on a wire rack.
  11. 11And that's it! Our no-sugar-added Coca de San Juan is ready.
