If you fancy a traditional Spanish pastry but want a lighter alternative, you are going to love these healthy ensaimadas. At home, we call them "mock ensaimadas" because they come together in no time, without any hassle or long proving times, making them an ideal treat for breakfast or an afternoon snack.

With a simple base of whole oat flour and whipped fresh cheese, we get a super tender, irresistible crumb. Finished with a dusting of vanilla protein powder in place of powdered sugar, they turn out delicious and so comforting. Let's get cooking!

Ingredients

Ingredients you need for this recipe

  • 3 eggs
  • 30gr whole oat flour
  • 80gr 0% whipped fresh cheese (quark)
  • 20gr spreadable protein cheese
  • Baking powder
  • Sweetener (optional)

Topping

  • 1 tablespoon vanilla protein powder (whichever you use)

Step by step

Method

  1. 1Preheat the oven to 200ºC.
  2. 2Separate the 3 eggs, putting the whites in one bowl and the yolks in another.
  3. 3Beat the egg whites to stiff peaks and set aside.
  4. 4In the bowl with the yolks, add the sweetener, fresh cheese, and spreadable cheese, then whisk well.
  5. 5Sift the oat flour together with the baking powder and stir it into the yolk mixture until completely smooth.
  6. 6Now gently fold this mixture into the whipped whites, working carefully so they do not deflate.
  7. 7Line an oven rack with parchment paper and spoon small mounds of the batter onto it.
  8. 8Bake at 180ºC for about 30min.
  9. 9To give them the classic ensaimada look and flavor, dust the tops with vanilla protein powder once they are out of the oven.
  10. 10All done! Our healthy ensaimadas are ready to serve.

Notes

  1. 1You can use plain oat flour, finely ground rolled oats, or any flavored oat flour you like, keeping in mind that it will impart its flavor to the recipe.
  2. 2The protein powder is optional. If you do not have vanilla protein powder, you can dust them with coconut sugar, finely ground desiccated coconut, or defatted cocoa powder. It will not be the exact same flavor, but you will still get lovely-looking pastries.
