Ingredients
Here are the ingredients
- Broth vegetables to taste (turnip, parsnip, leek, celery, carrot)
- 2 large potatoes
- 1 jar cooked chickpeas
- 6 chicken drumsticks
- White salted pork bone, chicken feet (optional)
- Water
Step by step
Method
- 1Place the chicken, bone, and chicken feet into a large stockpot.
- 2Wash and peel the vegetables, then add them to the pot as well.
- 3Rinse the cooked chickpeas under cold water and add them to the pot.
- 4Fill the pot to the top with water.
- 5Simmer over medium heat for 1 to 1:30 hours.
- 6Done! Now you can enjoy your homemade chicken broth
Extras
- 1During the first few minutes of boiling, skim off any impurities (the grayish foam that forms on the surface) using a slotted spoon.
- 2As the potato breaks down, it gives this broth its rich cloudy color; without it, the broth stays clear and golden (another way to get that rich body is by adding chicken feet if you prefer not to use potato).
- 3You can make it with chicken carcasses as well. I like using drumsticks so I can shred the meat and use it for another meal.
- 4Use skinless chicken so the broth doesn't end up greasy.
- 5I don't add any salt because we prefer it this way, but feel free to season to taste.
