Today we're making a homemade meat broth with chicken and chickpeas, a simple recipe you'll love having on hand for chilly days. We let the vegetables and soup bones release all their rich flavor as they simmer, yielding a deeply comforting broth that you can sip on its own or use as a base for your soups.

Ingredients

Here are the ingredients you'll need

  • Soup vegetables to taste (turnip, parsnip, leek, celery, carrot)
  • 1 jar of cooked chickpeas
  • Meat and bones (chicken quarters, ham bone, beef flank, backbone, marrow bone)
  • Water

Step by step

Method

  1. 1Rinse the meat and bones under cold running water and place them into a large stockpot.
  2. 2Wash and peel the vegetables, then add them to the pot as well.
  3. 3Rinse the cooked chickpeas under cold water and add them in.
  4. 4Fill the pot all the way to the top with water.
  5. 5Cook over medium heat for 1 to 1.5 hours.
  6. 6And that's it! Time to enjoy our MEAT BROTH.

Extra

  1. 1During the first few minutes of boiling, skim off any impurities (the grayish foam that collects on the surface) using a slotted spoon.
  2. 2I don't add any salt because the bones provide plenty of savory flavor on their own, but feel free to season to your taste.
