King Prawns with Chickpeas and Asparagus

Fish & seafood
Be the first to rate it!

Today I'm making king prawns with chickpeas and asparagus, a simple recipe that comes together in one pan and is ready in 30 minutes. I love this combination for a weekday lunch: it brings legumes, greens, and seafood together without having to juggle multiple dishes. The quantities serve four, making it wonderful to share at home.

Green asparagus brings fantastic texture, and smoked paprika (pimentón de la Vera) provides that savoury depth that makes me reach straight for the bread. Using jarred cooked chickpeas saves soaking and boiling time altogether. To keep these chickpeas and prawns nice and juicy, I make sure not to overcook the seafood.

If you love pairing seafood with greens, I recommend my King prawns with peppers and asparagus and my King prawn and vegetable stir-fry.

Frequently asked questions

Can I use frozen king prawns?

Yes, just thaw them in the fridge and drain them well before cooking. Pat them dry with kitchen paper so they don't release too much water into the pan.

Can I swap the king prawns for regular prawns or shrimp?

Yes, peeled prawns work fine. If they are smaller than king prawns, they will need less cooking time: take them off the heat as soon as they're done so they don't dry out.

How long do the chickpeas with king prawns keep in the fridge?

Store them in an airtight container in the fridge within two hours of cooking and eat within one to two days. Reheat only the portion you plan to eat until piping hot, without prolonging the seafood's cooking time.
