Mafaldine with Chicken Bolognese

Rice & pasta
Be the first to rate it!

Today I'm making mafaldine with chicken and a homemade Bolognese sauce of ground meat, ripe tomatoes, onion, and carrot. It's the kind of dish I love bringing to the table any day of the week, finished with a generous sprinkle of cheese. These amounts make four servings, so it works wonderfully for a family meal.

The secret is simmering the sauce gently so the tomatoes release their excess moisture and the flavors meld together. A spoonful of date paste gives it a lovely hint of sweetness, and the ruffled edges of the mafaldine are perfect for catching all that Bolognese. I top the dish with Eatlean low-fat cheese and serve it piping hot.

Here are the ingredients you'll need

  • 300g ground chicken
  • 600g ripe tomatoes
  • 1 large onion
  • 3 carrots

  • Pink Himalayan salt
  • Extra virgin olive oil

  1. 1Puree the tomatoes using a food processor, and do the same with the onion and carrots.
  2. 2Meanwhile, heat a drizzle of olive oil in a pot and brown the ground chicken.
  3. 3Once the meat is cooked, add the pureed tomatoes, onion, carrots, salt, and date paste.
  4. 4Simmer for 30-35 minutes.
  5. 5In the meantime, cook the pasta according to the package instructions.
  6. 6Once the pasta is cooked, rinse it briefly under cold water to halt the cooking and keep it al dente (if you love your pasta al dente, of course!).
  7. 7When the sauce is ready, spoon it over the pasta and top with cheese.
  8. 8All set! Time to enjoy our MAFALDINE WITH CHICKEN BOLOGNESE.

Frequently asked questions

Can I freeze the chicken Bolognese?

Yes, you can portion the sauce into airtight containers and freeze once completely cooled. Thaw it in the fridge and reheat thoroughly; I recommend cooking the pasta fresh on the day for the best texture.

What pasta can I use if I can't find mafaldine?

You can use tagliatelle, fettuccine, or penne, which also pair beautifully with this Bolognese. Just follow the cooking time listed on the package.

Can I make the sauce without date paste?

Yes, you can leave it out: the carrots and onion naturally add sweetness. Give the sauce a taste toward the end of cooking, as the sweetness will also depend on how ripe your tomatoes are.
