On Sunday I made this wonderful breakfast for my boys and myself. All three of us really enjoyed this treat that comes together in a flash, served with a little glass of fresh orange juice.

Sometimes we overcomplicate things thinking about what we shouldn't eat, when what really matters is using common sense and taking care of our mental health too. These little pancakes turn out delicious and are a fantastic way to start the day happy and full of energy, true to the Cocinandomelavida style.

Tips and tricks

Keep the pan over medium-low heat so the pancakes cook through without burning on the outside.

You can serve them in a bowl with a little milk or plant-based milk, just like breakfast cereal.

Add some chopped fresh fruit, like strawberries or banana, for freshness and fiber.
