Today we're making a pizza with a quinoa crust, a fun and delicious twist for pizza night at home. We top it with buffalo mozzarella, sweet little cherry tomatoes, and sliced mushrooms, then finish it off with a spoonful of homemade pesto. Let's roll up our sleeves to get a delightfully crisp crust and gooey melted cheese.

Prep: 15 minCook: 30 minServes: 2

Ingredients

Here are the ingredients you'll need

  • 100g quinoa or quinoa flour
  • 60ml water
  • Pinch of pink Himalayan salt

Toppings

  • 1 ball of buffalo mozzarella
  • Cherry tomatoes
  • Mushrooms
  • Homemade pesto

Step by step

Method

  1. 1If you don't have quinoa flour, grind the raw quinoa in a food processor or blender until fine.
  2. 2Transfer the ground quinoa to a bowl, mix with the water and salt, and let it rest for 5min so it hydrates properly.
  3. 3Preheat the oven to 180ºC.
  4. 4Place the mixture onto a baking sheet lined with parchment paper. Lightly oil your hands and press the dough out into a round pizza shape.
  5. 5Bake until the crust turns golden and crisp.
  6. 6Remove from the oven and add your toppings.
  7. 7Bake again just until the mozzarella has melted completely.
  8. 8Drizzle with homemade pesto right before serving.
  9. 9All done! Time to enjoy our QUINOA CRUST PIZZA.

Extra Notes

  1. 1If your food processor isn't very powerful, soak the raw quinoa in water first, then blend it into a smooth paste that you can spread directly onto parchment paper.
  2. 2You can rinse the quinoa before grinding it to remove any saponins, though most store-bought varieties come pre-washed.
