If you love cheese as much as I do, this six-cheese brown rice crust pizza will win your heart. It's a delicious gluten-free option, perfect for using up leftover cooked rice and enjoying an easy, nourishing dinner at home without any fuss.

The crust comes together in no time by blending the rice with egg and spices. After that, all that's left is spreading on the tomato sauce and that irresistible blend of melted cheeses. Trust me, you won't miss traditional dough for a second.

Ingredients

Here are the ingredients for 2 servings

  • 250g cooked brown rice
  • 90g grated cheese
  • 1 Egg
  • Spices to taste

Toppings

  • Homemade tomato sauce
  • Cheeses (Emmental, cured Manchego, mozzarella pearls, Roquefort, goat cheese)
  • Grated cheese

Step by step

Method

  1. 1Preheat the oven to 200ºC.
  2. 2In a food processor, blend the cooked rice with the grated cheese, egg, and spices until well combined.
  3. 3Transfer the mixture onto a sheet of baking paper and spread it out evenly into a crust less than 1cm thick.
  4. 4Par-bake the crust for 10min.
  5. 5Remove it from the oven and add your toppings: first the tomato sauce, then the selection of cheeses.
  6. 6Return to the oven with the toppings for 5-8min, or until the cheese has melted and bubbly and the crust is golden and crisp.

Extra tips

  1. 1Bake directly on the oven floor or lowest rack for an extra-crispy crust.
  2. 2There's no need to use the grill setting.
  3. 3Let it rest on a wire rack so the base stays crisp.
  4. 4You can also use cooked white rice if that is what you have on hand; short-grain rice works best.
