Today I'm bringing you my oat crust tuna pizza, a great way to sort out a quick dinner without giving up on a homemade base. I make it with rolled oats, Greek yogurt, and pink salt: a simple mix where the yogurt helps bind the oats together. It's a recipe for two, ideal when you're craving pizza and want to try something a little different.

On top of this oat pizza dough, I add homemade tomato sauce, grated cheese, tuna, and olives. I like to drain the tuna really well so it doesn't add extra moisture and helps the crust stay crisp. Prep takes 15 minutes and bake time is 14 minutes in the oven.

If you'd like to try different crusts, I recommend my Spelt pizza with tuna and my Quinoa crust pizza.

Ingredients

Here are the ingredients for 2 people

  • 200g rolled oats
  • 200ml Greek yogurt
  • Pink salt

Topping

  • Homemade tomato sauce
  • Grated cheese
  • Light tuna
  • Olives

Step by step

Method

  1. 1Preheat the oven to 220ºC.
  2. 2Blend the oats in a food processor until you get a fine oat flour.
  3. 3Mix the oat flour with the yogurt and a pinch of salt.
  4. 4Knead until it forms a ball. If the dough stays too sticky, add a little more oat flour and knead until it becomes manageable.
  5. 5Divide the dough in two and shape into balls.
  6. 6Next, line a baking sheet with parchment paper and roll out the dough using a rolling pin.
  7. 7Pre-bake the crust for 3-5 minutes at 220ºC.
  8. 8Add your toppings to taste. I used tomato sauce, grated cheese, tuna, and olives.
  9. 9Bake again with the toppings for 8-10 minutes or until you see everything is nicely cooked and the crust is crisp.

Extras

  1. 1Bake on the bottom rack of the oven so your pizza turns out crispier
  2. 2No broiler needed
  3. 3Let it cool on a wire rack.
  4. 4You can use store-bought oat flour if you have it at home
  5. 5Oats are naturally gluten-free but can contain traces from cross-contamination. If you have celiac disease or gluten intolerance, buy certified gluten-free oats.

Frequently asked questions

Is this oat pizza suitable for a gluten-free diet?

Only if you use certified gluten-free rolled oats and check the labeling on the rest of the ingredients as well. Not all rolled oats are suitable for people with celiac disease.

Can I substitute the protein cheese with another cheese?

Yes, you can use grated mozzarella or another cheese that melts well. If you choose fresh mozzarella, drain it very thoroughly so it doesn't make the crust soggy.

How do I store leftover tuna pizza?

Store it in an airtight container in the fridge within two hours of baking and enjoy it within two days. To bring back some of the crispiness, I prefer reheating it in the oven rather than the microwave.
