Today I'm making quinoa with squid and vegetables, an easy recipe with asparagus and spring onions that we love for adding variety to our weekly meals at home. It's ready in 30 minutes using pre-cooked quinoa, so it's a lifesaver for a fuss-free weeknight lunch. These amounts serve two.

What I love most about this veggie quinoa is that I can cook everything in the same pan, letting all the flavours come together. The squid and a pinch of cayenne give it plenty of punch without needing a long list of ingredients. If you're not a fan of spice at home, feel free to skip it.

To keep mixing up your weekly menu, take a look at my King prawns with peppers and quinoa and this Squid with peas, two great options that share some of the same ingredients.

  • 180g cooked quinoa
  • 250g squid
  • 1 bunch of asparagus
  • 1 spring onion
  • Pink salt

  • Extra virgin olive oil

Step by step

Method

  1. 1In a frying pan, cook the squid after cleaning and slicing it.

  3. 3Add a drizzle of olive oil to the same pan and cook the chopped spring onion and asparagus.
  4. 4When tender, add the squid back in and sauté everything well.
  5. 5Finally, add the cooked quinoa, cayenne pepper, and salt, tossing well so all the flavours meld together.

Frequently asked questions

Is the 180 g of quinoa measured raw or cooked?

It's 180 g of already cooked quinoa. If you're starting from dry quinoa, cook it according to the packet instructions, drain it well, and then weigh out the amount you need.

Can I make the squid quinoa without any spice?

Yes, you can simply leave out the cayenne without replacing it with anything. The squid, asparagus, and spring onion provide plenty of flavour on their own.

How long will it keep in the fridge?

Store it in an airtight container in the fridge within two hours of cooking and eat it within two days. Only reheat the portion you're going to eat until it's piping hot.
