Today we're making stuffed tortellini with apple and butifarra sausage, a sweet and savoury combination we love when we want something a little different for pasta night. We sauté them with garlic, fresh rosemary, and a splash of white wine for a simple, flavourful dish that's perfect for sharing around the table.

  11. 11Now we can sit down and enjoy this STUFFED TORTELLINI WITH APPLE AND BUTIFARRA.

Extras

  1. 1You can easily use regular pork sausages instead.
  2. 2Pears work just as wonderfully in place of apples.

Tips and tricks

Choose a slightly tart apple, like a Granny Smith or Reineta, to balance the richness of the sausage.

Cook the pasta strictly according to the package directions, then finish it for a minute in the skillet so it absorbs the sauce.

Make sure the white wine cooks off completely before adding the pasta, so there's no harsh alcohol flavour left.
