Turkey Stew with Green Beans

Today I'm making a turkey stew with green beans—the kind of cozy, everyday meal you'll want on repeat. It's a simple stew made with onion, garlic, and frozen green beans, ideal for feeding the whole family: this recipe makes six servings and is ready in about 50 minutes.

To bring out plenty of flavor, I sear the turkey well and chop the onion finely so it melts right into the sauce. Then I let everything simmer gently until the liquid reduces and the meat turns tender. You can make this turkey and vegetable stew with water or broth; I'd recommend using whatever broth you have on hand to give it extra depth.

To switch up your weekly stews, I also recommend my Turkey ragout with quinoa and vegetables and my Turkey stew with potatoes, chickpeas, and green beans.

Ingredients

Here are the ingredients you need

  • 1kg turkey, cut into small chunks
  • 2 large onions
  • 2 garlic cloves
  • 1kg frozen green beans
  • Extra virgin olive oil
  • Water or broth
  • Black pepper
  • Pink salt

Step by step

Method

  1. 1Heat a drizzle of olive oil in a skillet and sear the turkey.
  2. 2Season to taste with salt and black pepper.
  3. 3Once the turkey is nicely browned and sealed, add the finely chopped onion and garlic cloves.
  4. 4When the onion begins to turn golden, add the green beans.
  5. 5Add paprika to taste and pour in enough water or broth to cover.
  6. 6Simmer for 20-30 minutes, or until the liquid has mostly reduced.
  7. 7All done! Our turkey stew with green beans is ready to serve.

Extras

  1. 1You can make this with fresh green beans as well; just wash, string, and cut them beforehand.
  2. 2Once the turkey is seared, I like to snip the pieces smaller with kitchen shears right in the pan so they're even nicer to eat.

Frequently asked questions

Can I use fresh green beans instead of frozen?

Yes, use the same amount of fresh green beans, washed, trimmed, and cut into pieces. Keep an eye on them while they simmer, as the cooking time can vary depending on their variety and thickness.

Can you freeze turkey stew with green beans?

Yes, once cooked you can freeze it in individual portions, even if you started with frozen green beans. Thaw in the fridge and reheat thoroughly; if the sauce has thickened too much, just stir in a splash of water.

How long does this turkey stew keep in the fridge?

Store it in an airtight container and enjoy it within 3 to 4 days. Pop it in the fridge within two hours of cooking, and only reheat the portion you plan to eat.
