Today we're making a vegetable stew with meatballs, a simple recipe that sorts out lunch without complicating things in the kitchen. We combine mixed mushrooms with turkey and chicken meatballs for a dish packed with flavor, relying on frozen vegetables to cut down on prep time.

Ingredients

Here are the ingredients you need for this recipe

  • 1 bag of frozen mixed mushrooms
  • 1kg frozen vegetable medley (menestra)
  • 1 pack of turkey and chicken meatballs
  • Himalayan pink salt
  • 2 garlic cloves
  • Ground black pepper
  • Extra virgin olive oil

Step by step

Method

  1. 1In a skillet, brown the meatballs and set them aside on a plate.
  2. 2Next, add the mushrooms and frozen vegetable medley straight to the skillet without thawing, cover with water, and cook until the liquid reduces down well.
  3. 3Once reduced, season to taste with salt, pepper, a drizzle of olive oil, and the minced garlic.
  4. 4Add the meatballs back in, stir well, and pour in another splash of water.
  5. 5Cover the skillet with a lid and cook until the water has evaporated once again.
  6. 6All done! You can now enjoy your vegetable stew with meatballs.

Notes

  1. 1You can use fresh vegetables and mushrooms; I buy them frozen purely for convenience.
