Today we are making Bolognese zoodles, a simple and delicious way to enjoy zucchini noodles with a homemade tomato and minced beef sauce. We'll let the Bolognese gently reduce and cool slightly before tossing it with the zucchini, so we get a flavour-packed dish without any extra water.

Ingredients

Here are the ingredients you need for this recipe

  • 2 large zucchinis
  • 150gr minced beef
  • 1 carrot
  • 1/2 onion
  • 1 piece of celery
  • 1 teaspoon olive oil
  • 1 cup chicken broth
  • Himalayan pink salt
  • Ground black pepper
  • 3 cups crushed tomatoes (or 8 large grated tomatoes)

Utensils

  • Spiralizer

Step by step

Process

  1. 1To prepare the zoodles (zucchini noodles), just wash the zucchinis well, run them through the spiralizer, and set them aside.
  2. 2Now let's make the light Bolognese sauce.
  3. 3Finely chop the carrot, onion, and celery, then sauté them in a pan with the teaspoon of oil.
  4. 4Once the vegetables are soft and tender, add the minced beef and cook until nicely browned.
  5. 5Once browned, season to taste with pink salt and pepper.
  6. 6Add the crushed tomatoes and the cup of broth.
  7. 7Simmer gently over low heat until the sauce reduces and is no longer watery.
  8. 8Taste and adjust the salt and pepper.
  9. 9Let it cool down until it is just warm.
  10. 10Once the sauce is warm, toss in the zucchini and serve.
  11. 11All done! Our Bolognese zoodles are ready.

Extras

  1. 1Don't cook the zucchini or your dish will end up watery; as soon as zucchini hits heat, it releases all its water and falls apart.
  2. 2When you make the Bolognese sauce, multiply the ingredients and make a bigger batch so you can freeze it and have it on hand whenever you need it. You'll save time and money.
  3. 3You can also make it with minced chicken.
