Potato and Zucchini Puree with Boiled Egg

Be the first to rate it!

Today I'm making a potato and zucchini puree with hard-boiled egg, a simple and creamy recipe for those days when I want good food without complicating things. It uses everyday ingredients and makes four servings, so it's perfect for a family meal or for prepping ahead for the next day.

The potato adds body while the zucchini softens the blend, and unsweetened plant milk helps adjust the texture as you blend it smooth. I love this puree with hard-boiled egg because it takes everyday vegetable soup up a notch without piling on extra ingredients. All that's left is to salt it to taste and get it as silky as you like.

If you enjoy these simple recipes, I recommend my Mashed potatoes and Express zucchini pisto, two great options to switch up your meals.

Frequently asked questions

Can I use milk instead of plant milk?

Yes, you can substitute the 250ml of plant milk with the same amount of cow's milk. If you prefer plant milk, choose one that is unsweetened and unflavored so it doesn't change the flavor of the puree.

How long does this puree with hard-boiled egg keep in the fridge?

Store it in an airtight container in the fridge and eat it within 2-3 days. Refrigerate it within two hours of making it, and only reheat the portion you are going to eat, stirring until piping hot.

Can I make this puree without a food processor?

Yes, you can boil the potatoes and zucchini in a pot until tender and drain them well. Then, blend them with an immersion blender along with the plant milk, add the hard-boiled egg, and adjust the salt and olive oil.
