Today I'm bringing you a delicious and different way to enjoy veggies: homemade, wholesome cauliflower croquettes. They're perfect if you're looking for a lighter take on the classic version, with a wonderfully tender centre thanks to the mushrooms and cheese.

To keep things tidy and use barely any oil, I make them in the air fryer. You'll see just how simple it is to whip up these cauliflower croquettes, ideal for any lunch or dinner.
