Today I'm making baked cauliflower, zucchini, and cheese fritters, an easy way to give everyday vegetables a delicious twist. They're ready in 35 minutes and make such an effortless dinner: mix everything up, shape into patties, and let them bake until golden while you set the table.

If you like zucchini cheese fritters, you'll love this version with finely minced cauliflower. The egg and flour help bind everything together, while garlic powder adds plenty of flavor without any fuss. The amounts serve two, and I like to serve them with tomato olive sauce. Ready to give them a try?

Ingredients

Here are the ingredients you need for this recipe

  • 1/4 head of cauliflower
  • 2 eggs
  • 1/2 zucchini (or 1 medium)
  • High-protein cheese (or grated mozzarella/semi-cured)
  • 2 tablespoons quinoa flour (or your flour of choice)
  • Garlic powder
  • Taco or quesadilla seasoning (optional)

To serve

  • Tomato sauce with olives

Step by step

Instructions

  1. 1Preheat your oven to 200ºC.
  2. 2Finely chop the raw cauliflower into tiny rice-sized bits.
  3. 3Wash and grate the zucchini using the large holes of a box grater.
  4. 4Repeat with the cheese.
  5. 5Place everything into a bowl with the remaining ingredients and mix well until evenly combined.
  6. 6Spoon mounds of the mixture onto a parchment-lined baking sheet and gently flatten them into fritter shapes.
  7. 7Bake at 200ºC for about 20 minutes (or until nicely golden brown).
  8. 8All done! Our Cauliflower, Zucchini, and Cheese Fritters are ready.

Helpful notes

  1. 1If you mince the cauliflower very finely, it cooks through perfectly and won't taste raw.
  2. 2You can also cook these in a skillet on the stove instead of baking them.
  3. 3You can swap the 2 whole eggs for 3 egg whites; just add 1 extra tablespoon of chickpea flour to help bind.
  4. 4If cooking in a skillet, keep the heat low and take your time so all the vegetables cook through gently without burning, making them easy to flip.

Frequently asked questions

How can I keep the fritters from turning out too soggy?

Squeeze the grated zucchini thoroughly in a clean kitchen towel to press out all excess moisture before mixing. Also, chop the cauliflower very finely so the batter binds well and holds its shape.

Can I use another cheese instead of high-protein cheese?

Yes, you can swap it for any good melting cheese like low-moisture mozzarella or a semi-cured cheese. The flavor and richness will vary slightly depending on what you pick.

Can these cauliflower fritters be made gluten-free?

Quinoa flour is naturally gluten-free; just ensure it's certified if you need to avoid traces. Be sure to check the labels on your spice blend and tomato sauce as well.
