Ingredients

Here are the ingredients you need for this recipe

  • 1 Medium zucchini
  • 2 Tablespoons whole oat flour
  • 1 Egg
  • Pink Himalayan salt
  • Garlic powder
  • Parsley
  • Ground cayenne pepper
  • Grated low-fat high-protein cheese

Step by step

Method

  1. 1You can make them in a skillet or in the oven; if you're baking them, preheat your oven to 180ºC.
  2. 2Wash the zucchini thoroughly.
  3. 3Grate it using the coarse side of a grater.
  4. 4In a dish, beat the egg well and season with salt, garlic powder to taste, parsley, and ground cayenne.
  5. 5Add the grated zucchini.
  6. 6Finally, fold in the two tablespoons of oat flour and the grated cheese.
  7. 7Mix well and let the batter rest for a few minutes.
  8. 8Lightly grease a non-stick skillet and wipe away any excess oil with a paper towel.
  9. 9Spoon dollops of the batter into the pan to form small pancakes and let them cook gently over low heat.
  10. 10Once set and golden on the bottom, flip them over to brown lightly on the other side.
  11. 11Continue until you have used up all the batter.
  12. 12If you make them in the oven, bake for 20-30 minutes at 200ºC.
  13. 13All done! Our Zucchini Pancakes are ready to enjoy
