Ingredients

Here are the ingredients you need

  • 2 Packs fresh shimeji mushrooms
  • 1 Large carrot
  • 1 Jar cooked chickpeas
  • Pink Himalayan salt
  • Black pepper
  • Extra virgin olive oil

Step by step

Method

  1. 1Clean the mushrooms and trim away the tough stems.
  2. 2Add a few drops of olive oil to the skillet and sauté the mushrooms until they begin to turn golden.
  3. 3Add the finely diced carrot.
  4. 4Season to taste with salt and pepper.
  5. 5Cover with a lid so steam builds up and cooks the vegetables through faster.
  6. 6Meanwhile, place the chickpeas in a colander and rinse them thoroughly under cold water.
  7. 7Drain well and add them to the skillet with another drizzle of olive oil.
  8. 8Cover again and cook for about 5 minutes so the flavours meld and the chickpeas heat through.
  9. 9Done! Our chickpeas with mushrooms are ready to enjoy.
